- 1 large or xl egg
- 1 tablespoon refried beans
- 2.5 tablespoons grated cheddar cheese
- 1.5 tablespoons fresh salsa (or 1 tablespoon fresh chopped tomatoes, .5 tablespoons jalapeno peppers, 1 dash cilantro)
- 1 dash salt - optional
- 1 dash pepper - optional
- 1 oven safe ramekin
- Rooster sauce - optional
- heat oven to 375 degrees
- Add tomatoes, peppers and parsley into bottom of ramekin - or substitute salsa
- Add refried beans on top of tomatoes and peppers - make a divet in the beans for the yolk
- Break egg over previous ingredients and add salt and pepper
- Place ramekin into oven and bake for 7 minutes
- Add shredded cheese over egg and bake another 7 minutes.
- Broil for 1 minute
- It is best to undercook this a little as the ramekins will continue to cook the egg once removed from oven.
- Can top with rooster sauce if you want to spice it up
