Thighs tend to be both the tastiest and cheapest chicken parts and make excellent soup.
gather
- water - enough to fill the pot
- chicken thighs - 2 packs (6 thighs?)
- bacon grease
- ginger, a good chunk
- lemon, 1/2 or so
- garlic
- onion (or better yet scallions)
- celery, some
- carrots, some
- 1 tbs gelatin
- tamari
- salt
- pepper
cook
Chop up all the vegetables. Thinly slice the lemon. Saute the vegetables in some amount of bacon grease, then add the tamari, lemon slices, chicken and water. Simmer together in stock pot until nice (at least an hour). Add gelatin somewhere along the way. Pull the chicken from the pot and pick all the meat off - return meat to pot. Get rid of skin and freeze the bones. Serve with tamari and hotsauce.
