Alton Brown's (tweaked) Pressure Cooker Chili
SERVE with ../CornBread
- 1.5 lbs stew meat (beef, pork, and or lamb) cut into small 1"to 2" cubes.
- 2 tsp olive oil for browning
- 1.5 tsp pink salt or "jane's original mixed-up salt"
1C dried beans soaked overnight w/a strip of kombu. Then discard kombu & all of the soaking water
- 1 (12oz) beer / guiness or chimay
- 1 (16oz) container fresh salsa
- 1C chopped veggies (combo of / carrot, celery, rutabaga, parsnip, turnip)
- 30 salted tortilla chips
- 2 chipotle peppers canned in adobo sauce, chopped
- 1TBS adobo sauce (from chipotle peppers in adobo)
- 1TBS each: tomato paste, harissa paste, chili powder, cumin, coriander, herb mix (de provence?)
Place cubed meat in large mixing bowl. Toss w/oil & salt. Set aside
Heat pressure cooker. Add meat in 3 or 4 batches and BROWN till crunchy & carnitas-like on all sides. Once each batch is browned, place meat in a clean large bowl.
Add beer and deglaze pot scraping browned bits. Add browned meat along w/veggies, soaked beans, spices, salsa, tortilla chips, chipotle peppers, adobo sauce, tomato paste. Stir to combine. Lock Lid. Heat to first red line. Adjust heat to hold temp at first red line and cook for 25 mins. Remove from heat cool down by slow release. (just let it cool). Serve w/Cornbread
