Heath's Birthday Cupcakes
- some flour - some sugar - some milk
in 2003 - we made Vinegar Cake mini-cupcakes (with vanilla icing). A double recipe makes more cupcakes than you need for a class of 38 to have 3 mini-cupcakes each. A single recipe makes not quite enough. Extras are better. However, you only have to make one icing recipe to cover a double cupcake recipe. Bake for 18-20 minutes at 350 instead of the recipe directions. Putting the iced cakes in a jelly roll pan and then covering with another jellyroll pan seems to work splendidly.
