gather
- 1 large Napa cabbage
- 1/2 cup kosher salt
- 5 cloves of garlic
- 1 2-inch piece of ginger, peeled and roughly chopped
- 2 Tbs Korean fish sauce
- 1 Tbs finely chopped salted shrimp (optional)
- 1 tsp honey
- 1/4 cup Korean red chili powder
- 1 daikon radish, cut into thin 2-inch strips
- 5 scallions, chopped into 1-inch pieces

Cut the cabbages in half lengthwise then chop each half into 1-inch sections.
