Not entirely low carb, but slow carb, so easy and so tasty.
- 1 pt dry beans
- 3 pts water
- 5 tbs fat (bacon dripping is especially nice)
- salt and pepper
Soak beans, discard soakwater. Pressure cook pintos & water at 2 bars for 1 hour. Heat the fat in a heavy skillet over medium heat. Add beans, beanwater, beans, beanwater while smushing with a potato masher. Salt & pepper to taste. Add water or cook down to desired consistency.
