- 3 lbs meat, cut into 1/2 inch cubes (Can substitute ground if you must; brown it dry then add grease, shorter simmer.)
- kosher salt to taste
- 1/4 cup bacon grease
- 2 onions, chopped
- 4 cloves of garlic, minced
- 4 Tbs chili powder
- 1 Tbs paprika
- 1 Tbs dried oregano
- 1 Tbs liquid smoke
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 small can fire roasted diced tomatoes
- 4 cups stock
- 2 Tbs coconut flour (to thicken)

Cube and salt meat. Heat grease in a large pot on high heat. Brown meat in batches (about 3 minutes per batch) transferring each batch to a dish. Reduce heat to medium; brown onions and garlic, about 5 minutes. Add spices, mix well. Return meat to pot, cook about 10 minutes keeping the pot well scraped. Add tomatoes and broth. Bring to a boil keeping the pot well scraped. Reduce heat, add coconut flour, simmer at least 2 hours.
