Black Bean Dip
- 4c cooked black beans
- cooking water from the beans
- 1/4c olive oil
- 2tsp chipotle powder
- 2Tbs toasted cumin
- 2tsp toasted coriander
- 1tsp salt
- juice of 1 lime
- 1Tbs tamari
- chopped cilantro for garnish
blend all ingredients(cept cilantro garnish) in blender or cuisinart till smooth add a tablespoons of bean cooking liquid at a time to achieve a smooth light consistency . Stir in cilantro & serve. Can also add chopped avocado.
