Ubiquitous Black Beans
- 3c dried black beans soaked overnight
- 1 strip kombu
- 1 carrot (cut in half)
- 3 stalks celery (cut in half)
- 1Tbs salt
1Tbs each toasted/cumin & coriander
- Place beans in big stock pot w/water up to 4" above beanline. Add Kombu, carrot, celery, bring to boil, reduce flame to active simmer. When beans are just about done (check in 1hr) add 1 T salt. cook 5 mins more. Drain water. Discard veggies. Beans can be frozen.
