Fresh Asian Cabbage Salad
For weekday lunches don't toss in dressing, pack it separately & add before serving.
- 1c shredded red cabbage
- 1c shredded green cabbage
- 1 carrot shredded
- 1 cucumber shredded
- 1/2c seamiazo
- 1c chopped fresh cilantro
- 1c chopped fresh mint
- 3/4c sliced baked marinated tofu
1c rice sticks (vermicelli) soaked in hot water & chopped
- 1/2c chopped peanuts
- also works w/jicama, radishes
