Wilted Greens
- 1 bunch greens
- 1 onion sliced
- 3 tbs canola oil
- 1 tsp salt
- 2 Tbs tamari
- 2 Tbs balsamic vinegar
Wash greens. Stack them, roll them the long way and slice into thin strips 1/2 to 1/4 " wide. Heat oil in large saute pan w/lid. Add onions & salt. Lower heat to simmer and caramelize onions. Add greens & cover till volume is reduced (1 or 2 mins). Uncover stir till wilted (2mins more). Stir in tamari & balsamic vinegar. Can be served w/mushroom gravy
